2 cup blanched almonds
3/4 cup (6 ounces) of water
4 Tablespoons fresh lemon juice
2 teaspoon Nutritional Yeast
1/2 teaspoon Hymalayan Salt
Instructions
1.) Using a high-speen blender (we used a Blendtec), add all the ingredients and blend on high for about 1 minute.
2.) Scrape the sides and blend again until it resembles the look of traditional ricotta cheese. Scrape the “cheese” and put it in an air-tight container and refrigerate for several hours.
3.) Serve it with honey and crackers for a deliclious appetizer or in recipes that call for traditional ricotta cheese.
