Vegan Almond Ricotta Cheese

Ricotta cheese is was a favorite of mine – that is until I found out dairy no longer agreed with me. Giving up dairy wasn’t as hard as something other things – our Almond Milk recipe helped when I wanted a cappuccino. But a Vegan Almond Ricotta Cheese? I was definitely curious, how would it taste?

My love for ricotta cheese would not be denied even though I was now eating a dairy-free diet! So off to grocery store, I went in search of vegan almond ricotta but wow, the price was SO high. That’s when I thought hmm – there’s got to be a recipe out there so I can make my own and I was right, there are several and they are all a little different. So I took a look at all of these, tested a few and then took what I liked out of each and left what we didn’t and came up with this.

One of the best things about making your own food is you know EXACTLY what goes into it. When I read the ingredients on the one at the grocery store – it has almonds, salt, enzymes, tartaric acid, and cultures. I looked up Tartaric Acid and while it does seem to hold some nutritional value, if eaten on large doses, it can cause vomiting, diarrhea, increased thirst, and gastrointestinal inflammation (source). And I am not even sure what enzymes and cultures they are putting in there.

I am not trying to be an alarmist, I am sure the company has a good reason for putting those ingredients in there but what I am saying is that when you cook at home, you know exactly what you are putting into your body!

Let’s take a closer look at the main ingredient, almonds:

Almonds:
  • Almonds are a great source of Vitamin-E, in fact, a single ounce has 37% of our daily needs (source). What does V-E do for us? It is a fat-soluble antioxidant that protects our cell membranes from oxidation damage (source).
  • Almonds are also a good source of Magnesium and Manganese, plus they have protein, fiber and are full of healthy monounsaturated fats.

Now, back to the recipe! Give this Vegan Almond Ricotta Cheese a try, it is delicious and so versatile – it can be used for both sweet and savory recipes.

Easy To Make Delicious Vegan Almond Ricotta Cheese

Description

This 5-ingredient Vegan Ricotta Cheese is delicious and versitile for sweet and savory recipes!


Ingredients

Units Scale

2 cup blanched almonds

3/4 cup (6 ounces) of water

4 Tablespoons fresh lemon juice

2 teaspoon Nutritional Yeast

1/2 teaspoon Hymalayan Salt


Instructions

1.) Using a high-speen blender (we used a Blendtec), add all the ingredients and blend on high for about 1 minute.

2.) Scrape the sides and blend again until it resembles the look of traditional ricotta cheese. Scrape the “cheese” and put it in an air-tight container and refrigerate for several hours.

3.) Serve it with honey and crackers for a deliclious appetizer or in recipes that call for traditional ricotta cheese.
