Pumpkin Pie Overnight Oats! Let’s just pause on that for a moment…pumpkin pie for breakfast?! YESSSS, please!

Fall is one of our favorite times of the year and these Pumpkin Pie Overnight Oats are the perfect way to start your day! Not only are they super easy to make, but they are also filled with nutritious ingredients to keep your tummy full and happy all day long!

So what’s the scoop, why are these so healthy?

Pumpkin: This Fall favorite is am immune booster powerhouse! One cup of pumpkin has 245% of the daily recommended intake of Vitamin A and 19% of Vitamin C. Plus it is high in potassium and fiber (source)!

Chia Seeds: These little seeds have long been known for sustaining energy. In fact, “chia” is the ancient Mayan word for strength. With just one ounce of chia seeds, you will get 18% of your recommended daily amount of Calcium. They also have more Omega 3s than Salmon, promote healthy skin, and reduce signs of aging. One ounce will also give you 45% of your daily fiber needs. This along with the healthy fats will leave you feeling more satisfied as you go through your morning (source).

Oatmeal: Heart-healthy oats  – I am sure you’ve heard that oats are good for you, but do you know why? These whole grains boast a good amount of soluble fiber called Beta-Glucan. Because this fiber is absorbed by the body more slowly it will make you feel fuller longer and beta-glucan has also been shown to lower the LDLs aka the bad cholesterol. Oats are a whole grain that is naturally gluten-free (although be sure to check the label for certified gluten-free) and has been shown to reduce the risk of colon cancer, heart disease and aid in weight loss (source).

Why make this recipe?

In addition to it being delicious, it is super easy to make! This time of year can be hectic, so we came up with this recipe. Just make these Pumpkin Pie Overnight Oats the night before and in the morning, you will have an extra few minutes to enjoy your breakfast. That is is you don’t push the snooze button too many times. 🙂 We get it, we do it too sometimes!! Enjoy!

Description

Who doesn’t want pie for breakfast?! These Pumpkin Pie Overnight Oats are such a quick and easy way to get a delicious and healthy breakfast in the morning! Plus, these oats have all the feel-good Fall flavors!


Ingredients

Scale

1/2 cup unsweetened coconut milk*
1/2 cup gluten-free rolled or old fashioned oats
1/4 cup pumpkin puree (not pumpkin pie filling)
1/4 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp vanilla extract
1 tsp chia seeds
23 tsp pure maple syrup

Optional Ingredient:

12 scoops of collagen peptides for added protein, I used Vital Proteins


Instructions

1. Mix all ingredients together in a small container (we like mason jars) 

2. Cover and store overnight in the refrigerator

3. Top with chopped walnuts or any nut you like and raw honey if you’d like it a bit sweeter.
