Pink Grapefruit and Avocado Salad…we understand that you may be questioning this combination because after all, it does sound interesting. But oddly enough, it is so delicious!

The sweet and tangy taste of the grapefruit pairs so wonderfully with the creamy and smooth taste of the avocado. It is super light and refreshing from the acidity of the grapefruit.

And this salad is SO healthy!

Let’s start with the health benefits of Grapefruit:

Grapefruits contain fiber, potassium, lycopene, vitamin C, and choline. The combination of powerful nutrients allows grapefruit to help maintain a healthy heart. Avocados are prized for their healthy fats, which is true but there is more to this delicious fruit (yes, it’s actually a fruit, not a vegetable) than just healthy fats. Let’s talk about the fat in avocados since they are so popular for it. The main kind of fat in avocados is oleic acid which is a monounsaturated fat (the same kind as in olive oil). Monounsaturated fat is associated with reduced inflammation in the body (source). Inflammation in the body can lead to many diseases such as heart disease and metabolic syndrome.

Avocados are also high in vitamins K and C, Folate, fiber plus they have more potassium than bananas (source)!

Pink Grapefruit and Avocado Salad

Description

The Pink Grapefruit and Avocado Salad is easy yet elegant enough to serve to company! Plus it boasts a lot of nutrients!


Ingredients

Scale

Salad:

1 pink grapefruit

1 avocado

optional: microgreens

Dressing:

1/2 cup olive oil

1/4 cup pink grapefruit juice – squeezed from a fresh grapefruit

1 tsp. dijon mustard


Instructions

  1. Cut the skin off the grapefruit and cut it into slices by using the natural lines of the grapefruit segments as your guide. Place the avocado to the side.
  2. Cut avocado in half, top to bottom. Remove the pit and slice avocado longways then remove with a spoon.
  3. On a serving dish, alternate placing a slice of grapefruit and avocado until you’ve used all the fruit.
  4. To make the dressing, squeeze a fresh grapefruit into a measuring cup until it reaches 1/4 cup. Add 1/2 cup of olive oil (liquid should measure 3/4 cup now) and then add the dijon mustard. Whisk together until well incorporated.
  5. Drizzle grapefruit and avocado slices with dressing to your desired amount. Top with microgreens and enjoy!!

Notes

Can use any color grapefruit you like, I just happen to like the look of the pink grapefruit against the green of the avocado.
