Peach and Strawberry Smoothie Bowl

There are a few foods that remind me of summer and fresh peaches and strawberries are at the top of the list! This smoothie bowl combines peaches and strawberries with collagen powder for a delicious and refreshing breakfast or snack.

Health Benefits:

Peaches: This sweet fruit isn’t just a summertime favorite, it has a lot of vitamins and minerals. Most notably, Vitamins A & C, and both are great for a healthy immune system. Also, the riper the fruit, the more antioxidants peaches have – so enjoy those delicious ripe peaches now! They also contain both soluble and insoluble fiber, and are about 85% water – these are the perfect hydrating fruit for the hot summer days most of us are experiencing!

Strawberries: Another summertime favorite, strawberries are filled with vitamins and minerals like Vitamin C and Manganese. If you are wondering what in the world is manganese and how does it help me – according to MedicalNewsToday.com, “Manganese contributes to many bodily functions, including the metabolism of amino acids, cholesterol, glucose, and carbohydrates. Collagen: Although this is certainly an optional ingredient, I added it for the health benefits and protein. Collagen is a long-chain amino acid and is the most abundant protein in our body. It is found in our muscles, bones, skin, tendons, hair and it’s even found in our digestive system. It has been called the “glue” that holds our body together. The almond milk I used in this recipe is from one of my new favorite finds, JOI. I love homemade almond milk but I don’t love the process of making it. In the past, if I wanted clean organic almond milk, I had to soak the almonds overnight, blend with water, and then squeeze the milk out. It’s not hard but it does take some planning.

Description

This delicious smoothie bowl is filled with summertime favorites fruits – peaches and strawberries! I added some collagen protein to give this smoothie a boost of protein and nutrients!


Ingredients

Units Scale

1/3 cup of nut milk (I made this fresh from JOI Nut Milk, use coupon code: SAGEANDCELERY10 for 10% 0ff)

1 cup of frozen peaches

1 cup of frozen strawberries

2 scoops of quality collagen powder ( purchased mine from Thrive – see above to save $20 in shopping credit)

1 teaspoon good quality vanilla extract

Optional toppings: Honey, sliced strawberries, sliced peaches, granola


Instructions

1.) To make milk from JOI, use 1 1/2 tablespoon of JOI nut milk paste, blend with 1 cup of water. To make unsweetened vanilla almond milk, add 1 teaspoon of vanilla extract and a pinch of Himalayan salt.

2.) Now to make the smoothie bowl: Add 1/3 cup almond milk, frozen peaches, frozen strawberries, collagen (if using), and vanilla extract and blend in a high-speed blender. **

3.) Pour into a bowl and top with sliced peaches and strawberries (bananas would be delicious too), add any other topping you like, and drizzle with honey. Now you can dig in and enjoy!


Notes

**You might need to stop and scrape down the sides of the blender to make you blend it all smoothly. Add an additional tablespoon of milk if needed to create a smooth texture but be careful not to add too much as it will thin the mixture and you will have a traditional smoothie. It’s still delicious, just not thick enough to be eaten with a spoon.
