A quick, easy and delicious breakfast, Mocha Chia Seed Pudding!

Mornings always seem to be rushed, no matter how early we wake up. So one of our favorite ways to reduce morning stress is to meal prep breakfast. It’s such an easy solution, saves tons of time and really makes the mornings go so much smoother – can we get an Amen?! It’s been a while since we’ve shared our love of chia seed pudding and we came up with a way to combine a few of our favorite things – chia seeds, coffee and chocolate to make this delicious Mocha Chia Seed Pudding! Chia seeds are super nutritious as well –  just look at all the nutrients these little seeds have.

Chia Seeds are:

  • High in fiber, one ounce meets a whopping 40% of your daily fiber needs
  • Naturally gluten-free
  • High in plant protein, combine this with the high fiber and you will stay fuller longer
  • Have more antioxidants than blueberries
  • High in Iron, Magnesium, and Manganese
  • High in Calcium – which we know if good for our bones but we also need calcium for our heart, muscles, and nerves

Mocha Chia Seed Pudding

Not to worry if you are not a coffee fan, just omit the coffee and voilà – Chocolate Chia Seed Pudding! Either way – this breakfast is super easy to prepare and really does pack a ton of nutrients into one dish.

You can meal prep a few of these on Sunday and enjoy them during the week but you definitely want to let this sit overnight for the best texture. Oh, speaking of texture – if you don’t care for the texture of the chia seeds, you can blend all of this together and it makes it the texture of a traditional pudding. We don’t mind the texture and didn’t want to add that extra step, but definitely give that a try before you cross chia seed pudding off your list for good!

Description

ThisĀ  Mocha Chis Seed Pudding is a quick and easy make-ahead breakfast that will nourish your body and leave you feeling fuller and more satisfied than a starchy breakfast!


Ingredients

Units Scale

Dry Ingredients:

  • 2 Tablespoons (heaping) Cacao or Cocoa powder
  • 2 Tablespoons of Maple Syrup
  • 1/4 cup chia seeds
  • pinch of salt

Wet Ingredients:

  • 1/2 cup of unsweetened non-dairy milk
  • 1/4 cup cold coffee – can use decaf if you prefer
  • (Use 3/4 cup non-dairy milk if you decide to omit the coffee)

Toppings (optional):

  • Cacao Nibs
  • Raspberries
  • Bananas
  • Strawberries

Instructions

  1. In a small bowl, mix together the dry ingredients. Stir or whisk to remove any lumps.
  2. Add the wet ingredients and stir to combine.
  3. Pour into one large container (like a mason jar) or two small ones that have a lid on them and put in the refrigerator overnight.
  4. The next morning – grab your coffee and breakfast all in one and enjoy the extra time you have by mindfully enjoying your breakfast!
