These Red, White, and Blue Popsicles are perfect for your July 4th celebration! It’s hard to believe that we are already into the second half of 2020. And what a year it has been! While the 4th of July may look a little different this year, we can still enjoy these healthy Red, White, and Blue Popsicles while we are social distancing!

Do you remember those Fire Cracker popsicles that are red, white, and blue? They looked so fun to me as a kid because they were on theme for the 4th of July and filled with sugar. Well, I took a look at those ingredients and – WOW, the second ingredient is High Fructose Corn Syrup and the third is just plain corn syrup. Nothing on this ingredient list even resembles food.

I certainly don’t want to eat anything like that these days and I expect since you are reading this, neither do you. But what’s the 4th of July without themed food?! Boring, that’s what! So I created this easy, healthy, and delicious recipe so you can have fun themed 4th of July food and feel good about eating it!

What’s in the healthier version?

Fruit, coconut milk, and maple syrup! Our body recognizes all of these ingredients and will know how to digest them, unlike those other commercially made popsicles. I pureed fresh strawberries and fresh blueberries separately with a little maple syrup. If your fruit is ripe and sweet, you can even leave the maple syrup out and just use pureed fruit. Note: The picture above has lite coconut milk in it. This will work but the full-fat coconut milk tastes a lot better to me – I just didn’t have any at the time of shooting the image.

Popsicle Mold for the Red, White, and Blue Popsicles

Ya know I’ve gotta share the health benefits of these Red, White, and Blue popsicles – so here they are…

Health Benefits:
  • Strawberries: Fresh strawberries are high in fiber, Vitamin C, low in sugar, and a good source of Folate (B6) and Manganese. They are also full of antioxidants.
  • Blueberries: Have been called the King of Antioxidants, plus they are high in Vitamin C and K.
  • Coconut Milk: Contains a lot of healthy fats called medium-chain triglycerides (MCT). Unlike long-chain triglycerides, MCT goes straight to the liver and used as instant energy. Because of this, it is less likely to be stored in the body (source). Coconut milk has a good amount of fiber and is a good source of Iron, Magnesium, Manganese, and Selenium.

In addition to all of these health benefits, these Red, White, and Blue Popsicles are festive, easy to make, and delicious! Perfect for these hot summer days!

Red, White, And Blue Popsicle Recipe

Description

These Red, White, and Blue Popsicles are SO easy to make, delicious, healthy, and perfect for your 4th of July celebration!


Ingredients

Units Scale

For the Red Layer:

1 1/2 cups fresh organic strawberries, washed and cut into quarters

1 teaspoon organic maple syrup

For the White Layer:

1 cup organic full-fat canned coconut milk

1 teaspoon maple syrup

1 teaspoon vanilla (optional, but tasty)

For the Blue layer:

1 1/2 cup of fresh organic blueberries

1 teaspoon organic maple syrup

Also need:

Popsicle mold that makes 6 popsicles. If you want the one we used, click HERE.

If you don’t have a mold, you can use paper cups and peel them off once they have frozen – just like the good ole days 😉


Instructions

1.) Make sure the popsicle mold is washed and dried. Next, place your cut strawberries and maple syrup in a blender (We used a Nutibilet but I am sure any blender will work.). Process until smooth.

2.) Carefully pour 2 tablespoons of the strawberry puree into the popsicle mold and place it in the freezer for about 40 minutes to set.

3.) Shake the can of coconut milk before opening, then pour the contents in a bowl and whisk to combine. Make sure the milk is smooth, then whisk in the vanilla and maple syrup.

4.) Carefully remove the popsicle mold from the freezer and pour 2 tablespoons of the coconut milk mixture into each mold. Place back in the freezer for about 10 minutes to let it set just a bit.

5.) Carefully pull the mold out of the freezer and place the sticks into the mold. Then put the mold back in the freezer for another 30 minutes.

6.) While the red and white layers are freezing, make the blue layer by placing the blueberries and maple syrup in the blender. Blender until it is a smooth puree.

7.) Pull the mold out of the freezer one more time and carefully pour 2 tablespoons of the blueberry puree over the coconut layer. Place them back in the freezer for about 5 hours or overnight. **see notes**

8.) If you are using the same mold I did, fill a glass with warm/hot water and dip the popsicle (still in the mold) into the water for about 5-10 seconds and the popsicle should slide right out and they are ready to be enjoyed!


Notes

**be sure that leave room at the top of the mold as the mixture will expand in the freezer
