Fresh Fig and Arugula Salad

This Fresh Fig and Arugula Salad might just be the easiest recipe on Sage and Celery, but trust me, I did not sacrifice on the flavor! The combination of Figs, Arugula, and Almonds with the Champagne Vinaigrette is a match made in heaven!

Growing up, I wouldn’t even touch a fig much less put it on my salad. I didn’t know what I was missing, fresh figs are like little sweet bonbons, and they are actually healthy! Yes, I know dad, I should have listened to you:)

How are figs so healthy?

Fresh figs and even dried figs are a good source of vitamins and minerals (source):

  • B Vitamins
  • Zinc
  • Vitamin K
  • Potassium
  • Magnesium
  • Copper
  • Manganese
  • Iron

Their nutritional value really wasn’t even why I created this salad, it’s their taste that sold me! Fresh figs have a mild, sweet flavor and the crunchiness of their seeds really adds to the experience. I used Mission figs, but you can use whatever you like best! Feel free to add your protein of choice to make this a heartier salad.

Easy Fresh Fig and Arugula Salad, Tossed with Champagne Vinaigrette

Description

This delicious Fresh Fig and Argula Salad is easy enough for a weeknight and elegant enough to serve to company! Serve it with this Champagne Vinaigrette and you will think you are dining at the best restaurant in town!


Ingredients

Units Scale

To make the Champagne Vinaigrette:

6 Tablespoons Extra Virgin Olive Oil

1/4 cup Champagne Vinegar

1 teaspoon Dijon Mustard

1 teaspoon Shallots, minced

1 Tablespoon honey

salt and pepper to taste

To make the salad:

5 ounces Arugula

8 fresh Figs, sliced

1/3 cup Blanched Slivered Almonds

Other Toppings:

Goat Cheese, Parmesan Cheese, Proscuitto, Garbanzo Beans, Pecans, Hemp Seeds


Instructions

1.) To make the dressing, add all the ingredients together in a blender and blend or in a small bowl and whisk to bring all the ingredients together. You can also make this in a mason jar with a tight-fitting lid and shake to combine all the ingredients.

2.) Cut the stems off the fresh figs and slice them, set aside.

3.) In a large bowl, add the arugula and toss with some dressing (the amount will depend on how much you like on your salad but you will definitely have leftovers). Plate even amounts of arugula on 3 or 4 plates and equally sprinkle sliced almonds and fresh figs over each plate. Drizzle some more dressing on top if you like and enjoy!
