Description
You may have heard that chicken bone broth is healthy but it takes forever to make, well I have a secret to cut down on the time. You can have this delicious golden magic broth in just 12 hours!
Ingredients
1 pasture-raised whole rotisserie chicken carcass, remove the meat
2 celery stalks, chopped
2 carrots, chopped (you don’t have to peel them if they are organic)
1 medium onion, quartered (omit if you are Low FODMAP)
1/2 to a whole lemon, cut into quarters
1 teaspoon Himalayan salt
8–10 whole black peppercorns
2 Tablespoons apple cider vinegar
enough water to cover the carcass
You will need a slow cooker
Instructions
1.) Place the chicken carcass in the slow-cooker.
2.) Add the celery, carrots, lemon, onion (if using), salt and peppercorns.
3.) Pour 2 tablespoons of apple cider vinegar over the chicken and pour enough water on top to just cover the carcass. Make sure that you only fill the slow-cooker 3/4 of the way full.
4.) Cook on low heat for 12 hours.
5.) Strain with cheesecloth or fine-meshed strainer. Place the bone broth in glass jars or even ice cube trays. Keep it in the refrigerator for 3 days or in the freezer for 6 months. If you are freezing it in jars, be sure to fill only 3/4 full so the liquid has room to expand.
