Watermelon Mojito Popsicles are the perfect snack to enjoy this weekend because it is actually National Watermelon Day this Saturday, August 3rd! These popsicles are really easy to make, the longest part of the recipe is when they are in the freezer, so why not give these a try? Of course, if you have friends and family who are younger, you can just leave the rum out and they will still be a hit!
First things first, to have delicious Watermelon Mojito Popsicles the watermelon should be perfectly ripe and super sweet. This means you have to pick a ripe watermelon, which, let’s be honest, can cause a little stress!
Since we’ve picked our share of duds, we wanted to share some tips for picking the perfect watermelon.
Tips for picking a ripe watermelon:
- Look for what is called the Field Spot – this is the yellow spot (not white) that you see on one side of the watermelon. This spot comes from the watermelon resting on the ground and the larger and more yellow the field spot, the longer it has been resting on the vine in the sun and the sweeter it will be.
- Check the stem, if it is brown, that’s a good sign – meaning it ripened on the vine. If it is green, that means it was picked before it had a chance to ripen and won’t be as sweet.
- Whatever size you chose, pick the heaviest one, this means it is full of water and delicious.
- You can also give it a thump and if it sounds hollow, then it’s full of water. If it sounds dull, it is either underripe or overripe – take a pass on those, they will taste horrible!
Now ya know we have to talk about how nutritious watermelons are, but we will keep it short and sweet (get it?!:). While watermelon does contain other vitamins and minerals, it is highest in Vitamins A and C. And since they are over 90% water, these delicious summer melons are very hydrating as well.
Back to the popsicle recipe, after all, that’s why we are here, right? One thing to take note of that we decided to add the lime at the last minute so it isn’t in this picture. Feel free to taste it prior to adding the lime and see if you want to add it in there – we love it with it, but you make it however you like!

Watermelons are a summer favorite and turning this sweet melon into a Watermelon Mojito Popsicle, will be the hit of any celebration!
Ingredients
4 cups watermelon cubes
4 leaves of fresh mint
1 teaspoon freshly squeezed lime juice
1–2 Tablespoons Honey or Maple Syrup
2 shot glasses of rum (optional)
Instructions
1.) Place the watermelon cubes, mint leaves, lime juice, 1 tablespoon of sweetener of choice and rum into a blender and process into liquid. Grab a spoon and taste the mixture – add more of anything if you want to, just be sure to blend again so you don’t have any large pieces.
2.) You will notice that the mixture is foamy to you can strain it all through a fine-meshed strainer or cheesecloth if you want to. We did this and it got rid of most of the foamy part. If you want to skip this step, that’s fine too – it will still taste delicious.
3.) Pour evenly into the popsicle molds, leaving about a half of an inch from the top. And place in the freezer for at least 6 hours to overnight.
4.) When you are ready to enjoy these, run them quickly under warm water so that they come out of the mold in one piece. Now enjoy!
