Chocolate Avocado Pudding

If you want to satisfy your sweet craving and still stay on a healthy path, then we have THE recipe for you! This chocolate avocado pudding has the creaminess of regular pudding but none of the chemicals that you find in the boxed variety.

We’ve added healthy fats and the superfood, Cacao powder, to bump up the nutrition value and used maple syrup to sweeten it so there is no refined sugar here! Finally, we’ve added our own little twist with Cardamon. A native of India, this spice is known to have many health benefits. Cardamom helps improve cardiovascular health and is a good remedy for nausea and vomiting as well as aids in improving blood circulation.

Chocolate Avocado Pudding

We did find that a little goes a long way, so you may want to start with an eighth of a teaspoon first and taste it then decide if you would like to add more. It’s all up to you!

Servings: 2-3

Ingredients:

1 and 1/2 ripe Avocados

1/2 cup Maple Syrup

2 ounces of dark chocolate (we used 72% cocoa by endangered species chocolate)

2 T of Raw Cacao Powder or Unsweetened Cocoa Powder

1/4 – 1/2 cup Smooth Natural Peanut Butter

1/4 cup Unsweetened Almond Milk

1 tsp. Vanilla Extract

1/4 tsp. fine sea salt

1/8 – 1/4 tsp. Cardamon

Optional toppings: Cacao Nips, Shredded Coconut, Mini Chocolate Chips

Instructions:

1.) Finely chop chocolate and melt in a double boiler or microwave, stirring frequently so that it doesn’t burn. Once melted, add the maple syrup and stir to combine.

2.) Then place all of the ingredients in a food processor and blend well. You may need to stir and blend some more making sure your pudding is smooth and creamy.

3.) Spoon into 2-3 serving dishes and refrigerate for about 30 minutes.

4.) Top with optional toppings and enjoy! This dessert is best served soon after you make it.
