Gluten-free Apple Pancakes

Ahh, Fall is in the air! Well, that depends on where you are reading this! Here in Atlanta, we had a little taste of Fall and then Summer snuck back in….sigh! But with that short burst of cooler air, we started thinking about our favorite fall foods – and apples are at the top of the list! Cooking with apples comes with a few great benefits. One being, they taste DELICIOUS when cooked and then the aromatic spices that usually go hand in hand with apples, fill your house with the most amazing scent! It just screams Falls to us. Apples are also a great way to naturally sweeten food, so we thought why not make a brunch favorite with this great fruit and TA-DA you got yourself the most delicious, fluffy, gluten-free apple pancakes!

Gluten-Free Apple Pancakes

This quick and easy blender pancake recipe uses two healthy ingredients we want to talk about: heart-healthy oats and applesauce. I am sure you’ve heard that oats are good for you, but do you know why? These whole grains boast a good amount of soluble fiber called Beta-Glucan. Because this fiber is absorbed by the body more slowly it will make you feel fuller longer and beta-glucan has also been shown to lower the LDLs aka the bad cholesterol. Oats are a whole grain that is naturally gluten-free (although be sure to check the label for certified gluten-free) and has been shown to reduce the risk of colon cancer, heart disease and aid in weight loss.

You’ve heard the saying “an apple a day will keep the doctor away” – well it’s a little more complex than that but nutrition does play a crucial role in health and apples and applesauce can help. Whether you eat the fruit whole or mash it into unsweetened applesauce, the fact remains that apples are good for us! They are rich in antioxidants and contain a good amount of Vitamin C and the soluble fiber, Pectin (there’s that term again – yep it’s important!). Apples have been shown to reduce the risk of developing cancer, heart disease, hypertension and more.

We combined these two ingredients to make a delicious and easy breakfast that is good enough for company – but why wait for that? Make these anytime you want a taste of Fall!

Gluten-free Apple Pancakes

Ingredients

Scale

1 cup of gluten-free oatmeal

1 T honey

1 tsp. cinnamon

1/4 tsp cardamom

1 tsp. baking soda

1 tsp baking powder

1/3 cup almond milk

1/3 cup unsweetened applesauce

1 T apple cider vinegar

Pinch of salt

Coconut oil

Optional cinnamon apple topping:

1 apple thinly sliced

1/2 tsp. cinnamon

2 tsp. coconut sugar

1 T coconut oil



Instructions

1.) In a high-speed blender or food processor put oats, applesauce, milk, honey, vinegar, and spices and blend in high. Do not over blend because as the oats will become gummy.

2.) In a small bowl, toss the apple slices with the coconut sugar and cinnamon and set aside.

3.) Add 1 tablespoon coconut oil to a skillet and bring to a medium-high heat. Add apple slices and cook until apples are tender. Set cooked apples aside and wipe the skillet clean with a paper towel.

4.) Heat 1 tablespoon of coconut oil in the same skillet over a medium-high heat. Once the pan is hot enough, pour about 1/4 cup of the batter (or however big you want your pancakes) into the skillet and cook until it starts to bubble. Flip the pancake and allow it to cook through.

5.) Stack cooked pancakes and top with cooked apples – serve with granola, maple syrup or syrup of choice and enjoy!
