A friend of ours asked us to make a healthy shortbread cookie and as you may know, shortbread is loaded with butter, so to make a healthy shortbread cookie recipe wasn’t going to be easy – but we were definitely up for the challenge! And we DID it!! This shortbread cookie is absolutely delicious. With Valentine’s Day just around the corner, we decided to make these into hearts, making them the perfect homemade gift for your loved ones.
Traditional shortbread cookies are made with a ton of butter and refined sugar. In our recipe, we took out all of the butter and replaced it with coconut butter. We also replaced the refined sugar with maple syrup and only used a little bit of that. But don’t worry, they are plenty sweet enough for your sweetie 😉
Let’s talk about Coconut Butter:
No doubt you’ve heard of coconut oil but have you heard about coconut butter? Coconut oil is extracted from the coconut and coconut butter is made from the meat of the coconut. But does it have any nutritional value? You bet it does!
Coconut Butter Health Benefits:
- Contains Lauric Acid which boosts the immune system and has antiviral, antimicrobial, and antifungal properties
- It has been shown to increase your metabolism which can help you lose weight and boost energy
- It contains healthy fat, coconut butter is a medium-chain fatty acid and this type of fat is burned for energy unlike long chain fatty acids
- Contains Fiber…um – you know why we need this
- Contains Protein, which is important for virtually every cell in your body. Your body needs protein to make hormones, build and repair tissue, enzymes and much more
- Contains Potassium, which is an electrolyte that helps maintain a balance of fluids in the body, nerve and muscle function, including regulating heart rhythm
- Contains Iron, which is a trace mineral whose duties include making and maintaining healthy red blood cells
While there has been some controversy over coconut lately, we think it delicious in this recipe and is healthy eaten in moderation. Now, enough talk about nutrition – on to the recipe!

Description
This delicious shortbread cookie recipe has ALL the flavor of traditional shortbread but without all of that refined sugar and unhealthy fat – just amazing flavor!!
Ingredients
Dry Ingredients:
- 1 cup of almond flour
- 1/3 cup coconut flour
- 1/4 teaspoon Himalayan Salt
Wet Ingredients:
- 1/4 cup maple syrup
- 1/3 cup coconut butter
- 1 teaspoon vanilla extract
Chocolate Coating:
- 1/2 cup dark chocolate chips (we used Enjoy Life)
- 1 teaspoon coconut oil melted
Instructions
- Preheat your oven to 350° Fahrenheit. In a medium-size bowl, add all your dry ingredients and whisk to break up any lumps.
- In a small bowl, add the wet ingredients and stir to combine.
- Add the wet ingredients to the dry and stir to combine. This is a dry dough so, at this point, you might be better off getting your hands in there and pull the dough together. If it is too dry, add a teaspoon of liquid – either maple syrup or coconut butter and mix it in.
- You can technically roll out the dough right now, but we feel it is easier to work with once it’s been in the refrigerator for about 30-45 minutes.
- Roll out between to pieces of parchment paper and cut into the desired shapes. You want the dough to be no more than a quarter of an inch thick. Place cut out cookies on a cookie sheet lined with parchment paper and bake for 10 minutes.
- Allow the cookies to cool completely before decorating with the chocolate coating.
- To make the chocolate coating, melt the chocolate chips and coconut oil together and stir until all the chips are melted. We suggest doing this in the microwave in 15-30 second intervals, stirring in between.
- You can dip the cookies into the chocolate mixture or spoon it on – however you like! Let the chocolate harden on the counter or pop them in the fridge to speed up the process. Now, you can enjoy your cookies!!
