As a kid do you remember ever waking up to a delicious smell and instantly smile because you know your mom has baked up something amazing? Or coming in from playing outside on a cold day to the smell of freshly baked warm cookies? Well, that might have been one of my favorite parts of being a kid, and why one of my favorite things to do on cold winter days is to fill my house with the warm, comforting smells of baked goods. When I made these Apple Chai Spiced Gluten-Free Muffins, it took me right back to those moments as kids. The smell of the warm chai spices combined with the sweetness of the apples brought me to my happy place.
Now I know these muffins smell delicious, but I am confident in saying they taste just as good as they smell! They are not too dense or too light, have the perfect amount of sweetness and the chai spices take the apple flavor over the top. The chai spices produce a warming, soothing effect but also come with some great health benefits. If you look at each spice individually you will see they all pack their own punch:
Ginger:
- reduces inflammation
- aids in digestion
- boosts immune system
Cinnamon:
- antibacterial
- anti-inflammatory
- contains digestive properties
Cardamon:
- helps detoxify
- aids in digestion
- supports the immune system
Clove:
- contains antioxidants
- antiviral
- anti-fungal
The health benefits of these spices combined with the apples’ high fiber, allows you to enjoy these muffins at any time of the day without feeling any guilt! I found these muffins to be the perfect midmorning snack or that sweet late afternoon pick-me-up.

Description
These Apple Chai muffins are so delicious and gluten-free and very easy to make!
Ingredients
Dry Ingredients:
1 cup almond flour
1/2 cup gluten-free oat flour (make your own by pulsing rolled oats in a Nutribullet or food processor)
1/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon Himalayan salt
1/2 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
Wet Ingredients:
1 cup unsweetened applesauce
3 Tablespoons melted coconut oil or we used MCT oil
1/4 cup maple syrup
1 Tablespoon Apple Cider Vinegar
1 egg
1/4 cup nut milk (can also use dairy milk if you tolerate it)
1 cup chopped apple
Instructions
1.) Preheat your oven to 350°. Line a muffin pan with liners or grease with coconut spray and set aside. In a medium-sized bowl add all the dry ingredients and whisk together to combine and remove any lumps.
2.) In a large bowl, add the wet ingredients (excluding chopped apple) and whisk to incorporate.
3.) Combine the dry ingredients into the wet ingredients and stir to combine all. Fold in chopped apples.
4.) Scoop batter evenly in the muffin pan and if you like sprinkle a few rolled oats on each.
5.) Bake muffins for about 20-25 minutes. Muffins are done baking when you insert a toothpick in the center of one and it comes out clean (without any crumbs attached to the toothpick).
6.) Let the muffins cool in the pan for about 5-10 minutes then let them cool completely on a wire cooling rack and enjoy!!
