We came up with this recipe in hopes of going apple picking at an orchard. We had our hearts set on taking a fun, little road trip to get a bunch of apples and coming home and creating all the delicious apple recipes for you guys. Sadly, this dream was shot down when we called at least four orchards to find out they had no more apples to pick! But the weather was getting cooler and nothing sounded better than a warm baked apple treat! So what did we do? We drove ourselves down to our local Whole Foods Market and picked out the biggest, juiciest apples we could find and we made these delicious Vegan Stuffed Baked Apples. This is the perfect dessert to welcome in Fall and you’ll satisfy your sweet tooth without the sugar overload.

Apples are naturally sweet and when you cook them, the water evaporates and the heat speeds up the enzymes that break starches down leaving you with a sweeter apple! Apples are a great alternative to many calorie dense, nutrient lacking desserts. According to Medical News Today, they are extremely rich in dietary fiber, antioxidants, and vitamins such as vitamin C and B-complex vitamins (riboflavin, thiamin, and vitamin B-6). As we all know vitamin C is a strong antioxidant that can help our bodies fight against germs and free radicals helping us stay healthy as cold and flu season approaches. B-complex vitamins are key to maintaining red blood cells and the nervous system in good health.
While we didn’t get to pick our own apples, we love this easy and nutritious recipe and hope you do too. All the ingredients used in this dessert are all natural, so there is zero guilt when diving fork first into one of these juicy, crispy, warm apples. Adding a scoop of vegan vanilla ice cream on top definitely takes this dessert to the next level!

Description
This delicious recipe is the perfect ending to a meal, it’s easy and has no sugar added but is sweet enough to still be called dessert!
Ingredients
4–5 apples (We used Honeycrisp apples because we love them, but you can use whatever apples you like)
1/2 cup rolled oats – use gluten-free if needed
1/2 cup gluten-free all-purpose flour, we love Better Batter
1/4 cup coconut sugar
1/4 cup chopped pecans
2 Tablespoons melted coconut oil
2 Tablespoons coconut sugar
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Vegan vanilla ice cream (optional)
Instructions
1.) Preheat oven to 400°. Wash and carefully core each apple and spoon out enough flesh to leave a hole for the filling.
2.) Prepare the filling by combining all the dry ingredients in a bowl and stir or whisk to combine.
3.) Add the vanilla and melted coconut oil and still to combine.
4.) Place the cored apples in a small oven-proof dish (we used a 9×9 square dish) and fill each apple with the filling.
4.) Bake uncovered for 30 minutes and for the last 10-15minutes* of baking, place a sheet of foil on top to make sure the filling doesn’t burn.
5.) Remove from the oven and top with vanilla ice cream if you like and enjoy!
Notes
The time in the oven will vary due to the size of your apple. You want to make sure that your apples are fork-tender (cooked enough if you inserted a fork into the apple, it would insert easily).
