One of the many great things about summer is the fruit – fresh strawberries, watermelon and definitely blueberries. We love to go berry picking or to the farmer’s market and buy fruit in bulk and freeze it. This way we have summer’s goodies all year round. This week, we are making a delicious, nutritious and refreshing smoothie from blueberries, one of summer’s tiniest treasure.
This powerhouse smoothie is packed with many nutritious ingredients including cauliflower, blueberries, and spinach! Recently we have been trying to incorporate more veggies into our smoothies to cut down on the amount of sugar we are consuming. One great way to do that is by using frozen cauliflower. Cauliflower contains an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. Back to the other stars of this smoothie: blueberries and spinach!
Blueberries may be small but their nutritional value is mighty, proving good things do come in small packages. These blue little berries are low in fat and sodium and an excellent source of Vitamin-C, which is necessary for the growth and development of tissues. It also promotes the healing of wounds and of course, we can’t forget that Vitamin-C keeps our immune system healthy. Blueberries are also high in fiber and manganese which helps the body process nutrients like carbohydrates and protein. But most of all, they taste amazing when they are ripe and in-season.
Now let’s chat a little about Spinach, Popeye was definitely on to something! It is loaded with vitamins and minerals. Spinach is high in Vitamins A and C, Potassium, Iron, and Magnesium. Putting spinach in a smoothie is an excellent way to sneak in a serving of veggies. Although it may change the color of your smoothie, you can hardly taste it, trust us!
This is the perfect summer smoothie as it will leave you feeling refreshed and ready to take on the day! If you want to make it a meal, we always suggest adding in your favorite protein powder.
Ingredients:
1/2 cup frozen cauliflower rice (to make this yourself, pulse the florets in a food processor or buy it already riced)
1/2 cup frozen blueberries
large handful of spinach
1/8 cup basil (this is optional but really adds a nice flavor)
1/2 cup almond milk
Optional: 1 scoop of your favorite protein powder
Instructions:
1.) Place all the ingredients in a blender, blend and enjoy!
I was hesitant to try this recipe as I hate, I mean really hate, cauliflower. But took the leap and made it. I could not believe it, I couldn’t taste the cauliflower at all. A great smoothie and super healthy. I am now going to add this veggie to other smoothies.
