This nutrient-dense pudding not only tastes delicious but will keep you fuller longer than most typical breakfasts will. Chia seeds are native to central and southern Mexico and praised for their medicinal value and in fact, they were once used as currency. The word Chia actually means strength in the Mayan language.
Chia seeds pack some serious nutritious punch. With just one ounce you will get eighteen percent of your recommended daily amount of Calcium. They also have more Omega 3s than Salmon, promote healthy skin and reduce signs of aging. One ounce will also give you forty percent of your daily fiber needs. This along with the healthy fats will leave you feeling more satisfied as you go through your morning.

Ingredients:
Serves 2
1 cup Nut Milk, we used Unsweetened Almond Milk
1/4 cup Chia Seeds
1-2 Tablespoons Organic Maple Syrup
Cinnamon to sprinkle on top
Berries of choice and chopped Walnuts – optional
Instructions:
1.) In a small mason jar, glass or bowl stir together milk and maple syrup.
2.) Whisk or stir in the chia seeds and cover.
3.) Place in refrigerator overnight or at least an hour. Top with berries and walnuts.
Note: If the texture of the pudding is not to your liking, then blend the mixture in a blender until smooth before placing in the refrigerator.
