The star of the show is sweet potatoes. These delicious potatoes are chock full of Vitamin A which is good for your vision and immune system. They are also a good source of Vitamin C, which also helps keep you healthy especially during cold and flu season. They are higher in fiber than their white cousins the russet potato, which aids with digestion.

And the co-star to this recipe, raw cacao is no slouch either. Raw cacao has been known to balance hormonal mood swings, combat fatigue, and lower blood pressure naturally. Raw cacao also has Flavonol, an anti-inflammatory antioxidant that may protect against cardiovascular disease and help improve blood circulation. Description

These Sweet Potato Brownies are not only decadent and delicious, they are also healthy! Yep, it’s true, you can have your brownie and eat it too!


Ingredients

Units Scale

1 medium peeled and grated sweet potato – 2-3 cups when grated

2 whole eggs

1/2 cup melted coconut oil (use avocado or grapeseed oil if you don’t like coconut)

1/3 cup honey

2 teaspoons vanilla extract

1/2 cup raw cacao powder**, sifted

1 1/2 teaspoon baking powder

1 1/2 teaspoon baking soda

2 1/2 tablespoon coconut flour or Gluten-Free All-Purpose Flour


Instructions

1.) Preheat oven to 350 degrees

2.) Combine grated sweet potato, eggs, vanilla, honey, and coconut oil in a large mixing bowl and stir together until well incorporated. Next add cacao powder, baking powder, and baking soda and stir. Finally, add flour.

3.) Once combined, pour the mixture into a 9″ square baking dish sprayed with coconut oil to prevent sticking or line with parchment paper.

4.) Cook for 25-30 minutes. Remove and allow cool on a cooling rack for at least 20 minutes. Cut them into squares and enjoy!!

 


Notes

**If raw cacao is too bitter for you, try halving it with a good quality unsweetened cocoa powder but do give the raw cacao a try – it’s so good for you!
